We don't just cook
carnitas.
We keep a tradition
alive.

Small-batch, slow-rendered pork, wood-fired breads, and pantry staples sourced with the same deliberate care Don Porfirio brought when he first opened his doors in Rialto.

Our Heritage

Patience is the
secret ingredient

Carnitas Don Porfirio was built on a single conviction: that food prepared without shortcuts carries something you can taste. Not just flavor — memory, place, intention.

Every batch of carnitas is rendered slowly in pure lard until the exterior crisps to amber and the interior surrenders to buttery tenderness. Our breads are mixed, folded, and baked on schedules that respect the dough, not the clock.

Located on East Foothill Boulevard, we serve Rialto and the greater Inland Empire with the same standard Don Porfirio set decades ago. No compromises. No shortcuts. Just food made the way it should be made.

The standards we
refuse to lower

Every item on our counter earns its place. These are the pillars our regulars come back for, day after day.

Golden crispy carnitas ready to serve

Slow-Rendered Carnitas

Pork shoulder braised in lard for hours until the fat dissolves and the meat caramelizes at the edges. Crisp outside, melting inside. No shortcuts, no pressure cookers — just time and heat.

Freshly baked bolillo and telera bread

Wood-Fired Breads

Bolillos with shattering crusts and pillowy centers. Teleras shaped for tacos, conchas dusted with sugar, and daily batches of pan dulce made from scratch before dawn.

Curated Mexican pantry ingredients

Curated Pantry

Heirloom beans, dried chiles sorted by heat and origin, moles you can simmer in twenty minutes, and salsas made in small batches. Everything we stock would pass our own table.
